Quick Way to Get Rid Of 22 Eggs That Are About to Expire

Boy what an Eggshausting day! So, earlier my husband informs me that we have today to get rid of 22 eggs because they expire. Ha! My stomach ached just thinking about downing 22 hard boiled eggs. But why did they have to just be hard boiled?

There are so many ways to cook an egg, and heck, hundreds of recipes that include eggs! But, me? Create them? Oh boy, I am definitely not known to be creative. But, I had 22 eggs to do something with, quick. So, my objective: Make a variety of things that somehow includes eggs. The challenge: Do it only using products I currently have in the kitchen. OK! Let's get "crackin'"..

♪♫22 extra large eggs on the shelf, 22 extra large eggs.♪♫Take 4 down, pass them around♪♫……and make:


The traditional "sunny side up": (♪♫18 extra large eggs on the shelf♪♫)

4 eggs cooked in a medium heated skillet/frying pan
Directions: Put a little butter or oil in the pan
Crack eggs into pan with all efforts to not break the egg yolk (I usually do)
I like to tip the pan a bit and scoop a little of the oil and sprinkle it on top of eggs as they cook.
Cook for appx 3 minutes or until egg turns white.

Chocolate Chocolate Chip Brownies: (♪♫16 extra large eggs on the shelf♪♫)

1 cup of melted butter
2 eggs
1 1/2 cups of flour
¼ cup of cocoa powder
2 cups of sugar
2 tsp of vanilla
2 cups of semi sweet chocolate chips (you don't have add anything else, but if you like, you can use walnuts, almonds, pretty much anything!)
Directions: In a bowl, mix butter, cocoa powder, eggs and sugar. Gradually stir in flour and vanilla. Whisk until mixture is smooth. Add chocolate chips (or whatever you are adding, if anything). Pour mixture into non-stick or lightly greased baking pan (13x9x2 works best). Place in preheated oven (350 degrees), bake for 35 to 40 minutes or until done. Sit out and let cool.

♪♫16 extra large eggs on the shelf, 16 extra large eggs.♪♫Take 2 down, pass them around♪♫….and make:

Basic Crepe with sliced bananas: (♪♫14 extra large eggs on the shelf♪♫)

1 cup of flour
2 eggs
½ cup of milk
½ cup of water
¼ teaspoon of salt
2 tablespoons of melted butter
Directions: Whisk flour and eggs together in a large mixing bowl. Gradually mix in milk and water, continue stirring. Add salt and butter. Continue to stir until mixture is smooth. Lightly butter or grease a frying pan/skillet and heat on medium. Pour the batter into the pan to whatever size desired. Make sure batter is applied evenly along the surface of the pan. Cook for about 2 - 2 ½ minutes or until light brown. Loosen and flip with spatula so the other side is cooked the same. Take out of pan and place on plate. Add desired toppings (strawberries, blueberries are a favorite) but for this, since it is a challenge to use only what I have in my kitchen at the present time, it's bananas... sprinkled with some powdered sugar and topped off with whipped cream. Serve warm.

Deviled Eggs: (♪♫8 extra large eggs on the shelf♪♫)

6 hard boiled eggs
2 tablespoons of mayonnaise (or to desired taste)
½ teaspoon of spicy mustard
A sprinkle of salt & pepper
A sprinkle of Paprika (for decoration)
Directions: After eggs have been cooked and cooled, peel and cut in half (length wise). Remove yolk and place in small mixing bowl. Add mayonnaise, sustard, salt and pepper. Mash mixture with a fork until smooth. Scoop out small amounts and place in the egg white shells. Sprinkle paprika on top.

Egg Salad: (♪♫4 extra large eggs on the shelf♪♫)

4 hard boiled eggs
2 tablespoons of mayonnaise (or to desired taste)
1 tablespoon of spicy mustard (or to desired taste)
Sprinkle Salt and Pepper
Optional: You can add onions and paprika for a little kick to the traditional style.
Directions: After the eggs have been boiled, cooled and peeled, mix the eggs, mayonnaise, mustard, salt and pepper (and optional ingredients). Mash with a fork to soften mixture. The egg salad can be served on bread, in a salad, or as a pita sandwich.

Multicolored pasta salad with Egg wedges: (♪♫2 extra large eggs on the shelf♪♫)

1 lb. cooked multi colored pasta noodles
2 hard boiled eggs cut into 4 wedges each
Now, usually I put other stuff in my pasta salad, but remember, the challenge. Only use what I have in the kitchen. I usually also put in:
1 can of drained black olives
Handful of grape tomatoes
As far as dressing: You can use Italian, balsamic or make your own:
1 cup of oil
1 teaspoon of salt
1 teaspoon of pepper
a sprinkle of parsley and basil to desired taste
Directions: Mix together with pasta (optional ingredients) and place egg wedges on top.

A good ol' fashioned hard boiled egg (♪♫0 extra large eggs on the shelf!♪♫)

I couldn't go without having a snack for myself after making all of these recipes now could I? I'm pretty egged out. Anyway, boiling an egg is pretty simple, but if you need to know - -
Directions: Fill large saucepan with cold water until it is about an inch or two over the eggs. Heat sauce pan over medium high heat until water comes to a boil. Reduce the heat to low (or if you have electric stove just turn it completely off). Let the eggs sit for about 10 - 12 minutes. Remove the eggs, cool and peel.

So, I did it! Got rid of 22 eggs, quick. I haven't cooked like that….well, ever. Even though they are probably the easiest things to do, to do it all just totally wore me out. Enjoy your eggciting treats!
