New Recipes: The ‘Ellen’ Veggie Burger, Pear Salad

Celebrity chef Fabio Viviani made an appearance on "The Ellen DeGeneres Show" today to whip up two delicious recipes. Check them out!

'Ellen Burger'

  • 1 tbsp. flour
  • 1/2 red onion
  • 3 garlic cloves
  • 2 tsp. ground coriander
  • 2 tsp. ground cumin
  • 4 oz. button mushrooms, stemmed and halved
  • 15 oz. canned beans, drained and rinsed
  • 1 bunch fresh flat leaf parsley
  • Extra Virgin olive oil
  • Salt and pepper
  • Water

Heat the oil in a skillet over medium heat. Add the onion and mushroom. Cook for 5 minutes, then add flour, garlic, coriander, and cumin. Cook until onion has browned. Use water to deglaze pan if desired. In a food processor, place pan mixture, beans and parsley. Pulse until slightly combined. Continue to pulse while adding oil until moldable. Adjust seasoning with salt and pepper and form patties to your liking. Preheat the broiler to medium-high. Place patties on a sheet tray and place in oven. Leave under broiler until lightly browned. Flip and repeat on other side. Once browned on both sides, remove from oven and enjoy with all the trimmings.

Pear and Arugula Salad
Serves 2-4

  • 1 ripe pear, cored and sliced into thin half moons (don't peel)
  • 4 c baby arugula
  • 3 tbsps. Extra virgin olive oil
  • 1-2 tbsps. red wine vinegar
  • 1/3 cup pine nuts -- toasted
  • Salt and freshly ground black pepper to taste

Lay the pears out flat and slightly overlapping around the edges of 1 large plate. Leave the center open for greens. Dress the arugula with the olive oil and vinegar, season to taste with the salt and pepper, then place it in the center of the plate. Sprinkle with the pine nuts and serve.
