Goat Cheese, Apple, Arugula and Honey SandWITCH

Ingredients:

½ stick of salted butter at room temperature

2 eight ounce blocks of goat Gouda cheese, sliced thinly

12 slices of rye bread

2 apples sliced thinly

1 cup arugula

Honey

Directions:

Heat a large pan on the cooktop over low heat. Spread butter on one side of each bread slice. Make sure to build your sandwich with the buttered sides of the bread facing outwards. Place one layer of cheese on a slice of bread, followed by a few apple slices, a few sprigs of arugula, and a drizzle of honey. Top this layer with more cheese, followed by another slice of bread (butter side up!). The trick to making your sandwich proportionate is to make sure that the insides of the sandwich equal the thickness of one slice of bread. Repeat this process until all of the sandwiches are formed.

To grill the sandwiches, place them in the heated pan (you will have to do a few rounds) and cover with a lid. Let the sandwiches cook "low and slow" until the bottom side is golden brown, about 3 minutes. Flip the sandwiches, put the lid back on, and let them cook until all the cheese is melted, about another 3 minutes.

Remove from the pan and serve hot.
