Score One for the Vegetarians: No-Meat Chili Still Satisfies

Whether you've chosen a vegetarian diet or are simply looking to cut back on your meat consumption, you don't have to sacrifice your favorite flavors.

In fact, with a little ingenuity you can still enjoy a delicious bowl of chili. Best of all, this recipe cooks-up in only 25 minutes!

Ingredients

1 large onion
4 cloves garlic
Olive oil
1 orange or red bell pepper
1 16 oz. jar salsa
2 cans red kidney beans, drained
2 tomatoes, chopped
1/2 pint beer

Directions

1. In a large Dutch oven or saucepan, heat the oil and sauté the onions, garlic and bell pepper until the onions are translucent.

2. Add the jar of salsa and bring to the boil.

3. Stir in the kidney beans, tomatoes and beer. Simmer for 15 minutes.

4. Serve with crackers, sour cream, green onion and cheddar cheese.
