A Perfect Fried Egg

Looking for a foolproof technique to make crispy, perfectly cooked fried eggs? This recipe will have you dishing out fried eggs like a pro in no time.


Ingredients:


8 large eggs

Olive oil

Salt


Directions:


In a small non stick frying pan pour enough olive oil to cover the bottom of the pan. Heat the oil over a medium flame, and once hot, break two eggs into the pan. Let the eggs fry for about two minutes. If the oil starts to splatter, turn down the heat! The oil should be hot enough to cook the egg, but not hot enough to jump out of the pan. Once the edges of the whites begin to crisp up, carefully spoon the hot oil over the yolks for about 30 seconds. If you like your yolks well done, continue this process until a white film forms on the yolk. If you like your eggs runny remove them from the pan while the yolk is still golden yellow.


Continue to cook the eggs two at a time until you've made the desired amount.


Sprinkle with salt and serve with potatoes, bacon and salad (gotta have those greens)!

Metropolis Morning Bacon


To make bacon with all of the flavor and none of the mess, try this method. We use a cooling rack and a disposable tray to cook the bacon in the oven which allows the extra fat to drip into the basin. Throw the greasy mess away when you're done and enjoy your breakfast without the dread of scrubbing the stovetop!


Ingredients:


6-8 slices of bacon, cut in half

1 cooling rack

1 disposable lasagna tray (or any tray that is the right size for your cooling rack)


Directions:


Pre-heat oven to 350 degrees.


Position the cooling rack over the lasagna tray. If you don't have a cooling rack that fits over a lasagna tray, it also works to use a cookie sheet or a roasting pan. Arrange your bacon on top of the rack. Cook until golden brown, about 20 minutes.


Remove the bacon from the oven and blot with a paper towel before serving.

Super Smashed Potatoes Ingredients:


12 small yukon gold potatoes

½ teaspoon red chili pepper flakes

2 tablespoons chives, chopped

2 tablespoons parsley, chopped

Large pinch of salt

Olive oil

Ziplock bag


Directions:


In a large pan boil the potatoes until they are soft, about 20 minutes. Once soft, drain the water and allow the potatoes to cool (if you have the time, this is a great step to do the day before).


Heat a large saute pan over medium heat with a quarter inch of olive oil. While the oil is heating, fold the Ziplock bag around your potatoes (one at a time) and use a mallet to gently flatten them. Fry the flattened potatoes in the oil until golden brown, about two minutes per side.


To finish, sprinkle the fried potatoes with salt, chili and herbs. This is delicious served with a fried egg or as a side dish to enhance any dinner.
