Taking Sides: A Slow-Cooker Corn Pudding Perfect for Parties
Celebrate summer with this sweet-and-creamy corn pudding! Your preparation takes just five minutes, then the slow-cooker steps in to handle the rest. This easy and delicious corn dish is the perfect side for any summer get-together! It's a great way to get your kids to eat their vegetables!
Ingredients:
1 bag (16 ounces) frozen sweet corn kernels
8 ounces cream cheese, softened
1 cup Monterey jack cheese, shredded
1/2 cup milk
1/4 cup all-purpose flour
1/4 cup cornmeal
2 tablespoons sugar
1/2 teaspoon baking powder
1/4 teaspoon salt

Serves 6
Variations:
Add a 7 ounce can of green chilies during prep and reduce the sugar to 1 tablespoon for a delicious Green Chili Corn Pudding.
Directions:
1. Place all ingredients in a slow cooker. Mix well until combined. Cover and cook on low for 2 hours and 45 minutes. Remove the cover and cook for an additional 15 minutes.
