The Best Way to Cook Sweet Potato Fries

Sweet potato fries may be the nicest way ever invented for serving sweet potatoes. In this recipe, sweet potatoes take center stage in a healthy, baked treat that will make a believer out of any fry lover--crisp and brown in a thin layer of olive oil.

You can add an extra kick by seasoning with a sweet and savory spice mix and dipping into a Mequite-flavored mayonnaise. The recipe calls for 2-3 sweet potatoes, but my family can plow through a triple batch in no time at all.

This recipe makes an ideal side dish for burgers, sloppy joes or grilled chicken. Just slice, bake, and you've got a delicious side dish in just about 30 minutes.

Sassy Sweet Potato Fries

  • 2-3 Sweet Potatoes, peeled & sliced

  • 3-5 Tbsp. olive oil

Place sliced sweet potatoes in a large bowl (see photo below to see how I slice my potatoes). Drizzle olive oil over them and stir them until all the potatoes are shiny from oil, then sprinkle generously with spice rub. Spread potatoes in a single layer onto a cookie sheet and bake in an oven preheated to 400 degrees F for approximately 15 minutes. Use a spatula to flip fries over, return to oven, and bake for an additonal 15 minutes-or until fries have crisped and are slightly browned. Remove from heat and serve immediately with Sweet Mesquite Mayonnaise.
