The Easiest Appetizers To Serve Your Friends On Christmas

Italian Stuffed Mushrooms
1 lb. white button mushrooms, stems removed
½ lb. bulk Italian sweet sausage (or links with casings removed)
1⁄3 c. grated Parmesan cheese
¼ c. bread crumbs
2 T minced parsley.

Combine last four ingredients, and spoon into mushroom cavities. Bake at 350 degrees for 30 minutes just before serving.

Flatbread Pizza With Feta, Mint, and Lemon Zest

1 can pizza dough (I use Pillsbury)
Olive oil
1 garlic clove, halved
1 c. feta cheese
¼ c. grated Parmesan cheese
3 T minced fresh mint
1 T lemon zest
Red-chili-pepper flakes.

Stretch dough into a large rectangle. Cut in half. Drizzle both with olive oil, and bake on greased sheet at 450 degrees until golden brown, about 10 minutes. While hot, rub each flatbread with garlic. Top with feta and Parmesan, and bake until melted, about 3 minutes. Remove and sprinkle with mint, zest, and a few shakes of chili-pepper flakes.

Delicious, Bite-Size, So-Simple Hors D'oeuvres

Wrap store-bought bread sticks in prosciutto.
Fill endive leaves with hummus, and dust with paprika.
Make a variety of crostini by toasting thin baguette slices. Top with Gorgonzola and fig jam, olive tapenade, and goat cheese and roasted red pepper.
Marinate olives in fresh herbs and chili-pepper flakes.
Season nuts with chili powder, and toast lightly.

White Cosmopolitan

Who doesn't love a Cosmopolitan? Problem is, the cranberry juice leaves a serious stain if someone spills. Eliminate the stress by using white cranberry juice. Display the drinks in martini glasses on a silver tray, and garnish with a few cranberries on a stirrer.

2 c. citron-flavored vodka
1 c. Cointreau
1 c. white cranberry juice
½ c. fresh lime juice
Ice cubes

Combine the vodka, Cointreau, cranberry juice, and lime juice in a large pitcher filled with ice. Stir, and strain into martini glasses. The ingredients listed make about 8 cocktails.
