Serves 4

3-4 tomatoes
2-3 nectarines
1 ball fresh mozzarella
3/4 cups fresh basil leaves
extra virgin olive oil (enough to drizzle over the salad)
salt and pepper to taste
2-3 tablespoons balsamic vinegar reduced to a syrup (I add a bit of honey before reducing)

1. Slice the tomatoes, nectarines, and mozzarella in wedges of approximately the same size and arrange on a platter with the basil leaves.
2. Drizzle the olive oil over the top and sprinkle salt and pepper to taste. Drizzle the reduced balsamic around the edge of the platter and over the top. less

Summer tomatoes, bursting and sweet, display a number of colorful guises: they brighten our summer salads, fill our tarts and sandwiches and add warmth to our pastas and fish.

July's the time to pull some tomatoes off the vine and toss them into your summer staples while the sun's still setting late. Brought to you by the spirited home cook's community at FOOD52.
