Compound butters are my secret to fast and tasty holiday cooking! It's amazing what you can do to butter with a few simple ingredients. Savory and indulgent, this roasted garlic herb butter gives meat a delicious flavor and makes bread irresistible. Try rubbing a few tablespoons on a chicken or turkey before roasting - it makes a fabulous meal!

Ingredients

1 head of garlic
2 tablespoons fresh thyme, chopped
1 tablespoon fresh parsley, chopped
8 ounces salted butter, softened

Directions

1. Preheat the oven to 400°F. With a knife, slice the very top of the garlic head off, exposing the cloves. Wrap tightly with foil and place in the oven. Roast for 40 minutes until tender.

2. Once the garlic has cooled to the touch, remove the garlic cloves from the head by simply squeezing the head of garlic from the base with your fingers. Squeeze the cloves into a food processor or blender.

3. To the garlic, add herbs and butter. Pulse until the butter is smooth and everything is combined. Store in an air-tight container in the refrigerator for up to a week. Serve on bread, meats, vegetables and pastas.
