If you are planning on having a party to watch the Kentucky Derby or are just wanting a chance to make some awesome cookies then this is the recipe for you. I know you're asking your-self, what exactly would make anything Kentucky? the answer is the Kentucky bourbon inside of them. Perhaps this could just be another excuse to use alcohol in cooking but it really does play well with the chocolate chips. So if you're hosting a party or not go ahead and give this recipe a try, and let me know how it turns out for you. My guess is that it will be incredible. Recipe yields about 20 cookies.

Ingredients:

  • 3/4 cup all-purpose flour

  • 1/4 teaspoon baking soda

  • 1/8 teaspoon salt

  • 1/3 cup butter, softened

  • 3 tablespoons white sugar

  • 1/3 cup packed brown sugar

  • 1 egg

  • 2 tablespoon Kentucky bourbon

  • 1/2 cup chopped pecans

  • 1/2 cup semisweet chocolate chips

Directions:

  1. Preheat the oven to 350 degrees F. In a medium bowl, stir together the flour, baking soda and salt with a fork. Set aside.

  2. Cream together the butter, white sugar, and brown sugar until smooth. Beat in the egg, then stir in the bourbon. Stir in the flour mixture just until blended. Fold in pecans and chocolate chips. Drop by large spoonfuls onto baking sheets lined with parchment paper.

  3. Bake in the oven until the edges are lightly browned, about 10 minutes.

  4. Remove the pans from the oven and put the parchment paper on wire cooling racks. Let cool for 5 min on the racks.
