This is a great appetizer recipe that can be made ahead of time and baked just before guests arrive. The surprise is an olive inside the dough. This can also be served with drinks as the olive lends a great salty flavor.


Surprise Cheese Puffs

  • 2 cups shredded cheddar cheese

  • 1/2 cup butter, softened

  • 1/2 teaspoon salt

  • 1 cup flour

  • 1 small jar green olives


  1. Drain olives. Pat dry with a paper towel.

  2. In a large bowl, mix together all ingredients, except olives.

  3. Cover each olive completely with about 1 teaspoon of dough mixture.

  4. Place on baking sheet and bake at 400 degrees for 11 - 15 minutes until lightly browned.

  5. These can be made ahead of time. Freeze balls on a baking sheet and then place in a plastic bag. Bake right before guests arrive. You can then put these in a warmed, on low setting, crockpot and let your guests serve themselves.
