Vegan Oatmeal Recipe: Cherry Almond Steel Cut Oats



I was not a big fan of oatmeal as a kid. I wanted French Toast every morning or Mom got a very mouthy know-it-all in a side ponytail. As health became a matter of the heart, I started to rethink my relationship with oatmealBut, I still thought it sucked. It was just so bland and boring and so not French Toast. Cherry Almond Steel Cut Oats

What to Buy


2 cups organic unsweetened almond vanilla milk
2 cups water
8 ounces frozen dark sweet cherries
1 cup whole steel cut oats
1 tablespoon brown sugar
1/2 teaspoon salt
1 teaspoon vanilla extract
1/4 cup sliced almonds

How to Make It


In a medium pot, bring almond milk and water to a boil. Chop the frozen cherries. After water has come to a boil, stir in the oats, cherries, brown sugar and salt. Reduce the heat to low and simmer until liquid has absorbed.


Remove from the heat. Stir in the vanilla extract and sliced almonds. Divide the oats into single serving containers and refrigerate until you are ready to eat your vegan oatmeal!
