Johann immediately recognized a superior cheese and sought out a partnership with third-generation cheese maker Mike Scheps. Together they founded Maplebrook Farm, where artisans make curd from the milk of Vermont cows and stretch the mozzarella by hand in small batches, using no preservatives.
