June's In-Season Produce Inspires Fresh Recipes

Surely we're not the only ones rejoicing that our weekends can now begin with a trip to the farmers market to pick up the best produce the season has to offer. The only thing better than the R&R that naturally comes with the lazy days of summer are the endless choices of fruits and vegetables. The colors, aromas, and flavors make eating during this time of year tastier than any other.

The first day of summer isn't on the calendar until June 21, but its produce is already available in many parts of the country.

Whether you're harvesting your own backyard garden, or reaping the benefits of a local farmer's harvest, here is a list of the in-season produce for June, as well as recipes to help you enjoy them.

In-season vegetables include asparagus, artichokes, and green beans; for fruits, you'll want to look for strawberries, cherries, and grapes.

Strawberry Salsa

(Vegan)

Roasted Asparagus and Mushrooms with Rosemary

Artichoke Soup
(serves 3)

Ingredients
1/2 pound artichokes, peeled
3 cup chicken broth, divided
4 Tbs. light cream
Salt and pepper to taste

Instructions
1. Place artichokes in a saucepan and cover with cold water
2. Bring to a boil
3. Cover and simmer until completely soft
4. Cool in the liquid, then drain
5. Place the artichokes in a blender or food processor, add half of the chicken broth and puree until smooth
6. Gradually add remaining stock
7. Stir in light cream and season to taste
