Healthy Red, White & Blue Themed Breakfasts
Give your morning some patriotic pop with these healthy red, white and blue themed breakfast ideas. Pledge your allegiance to eating right with the all-American starters, which have all been kid-tested. Get your own kids in on the act by asking them to brainstorm as many red, white and blue breakfast ingredients as they can. Then let them help prepare the breakfasts with you. It's a great way to get kids excited about starting their day the healthy way!
Patriotic Parfait
3 cups vanilla Greek yogurt
8 strawberries, sliced
1 cup blueberries
Low-fat whipped cream
Red white and blue cookie sprinkles
Rinse and clean the strawberries and blueberries in a strainer and pat dry. Slice the strawberries into four pieces each. Place a handful of blueberries into the bottom of a clear drinking or parfait glass. Spoon half of the yogurt on top of the berries. Gently layer the strawberries on top of the yogurt. Carefully spoon the remaining yogurt on top of the strawberries, creating an even layer. Sprinkle a generous layer of the blueberries over the layer of yogurt. Top with a dollop of low fat whipped cream and a splash of cookie sprinkles.
Mom's Blueberry Bran Muffins
1/2 cup oat bran
2 12 cups whole-wheat flour
1 cup sugar
2-½ teaspoons baking soda
2 eggs, beaten
1 ½ cups buttermilk
½ cup oil
½ cup blueberries
1 cup raisin bran
Stir all of the ingredients together and refrigerate overnight. Heat oven to 375 degrees. Line a muffin tin with muffin cups. (Look for red, white and blue paper muffin cups.) Fill the muffin cups two-thirds full with batter. Let the batter stand 20 to 30 minutes. Bake for 12-14 minutes. Serve in a blue basket or bucket covered with a red-checkered napkin!
Red, White and Blueberry Waffles
Prepared waffle mix
Sliced bananas
Fresh blueberries
Fresh strawberries, sliced
After you've cooked the waffles, let the kids use the sliced fruits to make the waffles look like American flags by arranging the red, white and blue toppings in a pattern in each waffle crevice. Top with strawberry syrup.

Clean the blueberries. Clean and slice the bananas and strawberries. Give each of your kids a plate and let them create an American flag out of fruit. Test their memories without letting them look at a flag! Will they know where to put the blueberries?
