No Bake Raspberry Glace Cheesecake Pie

A raspberry glace cheesecake pie made with JELL-O No Bake Cheesecake is a cinch to prepare and tastes a lot like a raspberry swirl cheesecake. Since there's no baking involved, you can focus your energies on more important matters leading up to that holiday event. Just make sure to use canned or frozen fruit - not fresh - so that the gelatin in this recipe sets completely.

Here's how to put together your own no bake raspberry glace cheesecake pie in four easy steps:

What you need:

1 package JELL-O No Bake Cheesecake mix (without the topping)

½ cup boiling water

1 package (3 oz.) JELL-O Raspberry Flavor Gelatin

¼ cup frozen raspberries

1 can (11 oz.) mandarin orange segments, drained

How to make it:

Step 1: Prepare the JELL-O No Bake Cheesecake as directed on the package. You'll need to make the crust in a 9-inch pie pan and use either 2% or whole milk to make a rich and creamy cheesecake filling. Let the cheesecake chill in the refrigerator for about an hour before moving on to the next step.

Step 2: Prepare the gelatin mixture. In a small bowl, mix the JELL-O Raspberry Flavor Gelatin with half a cup of boiling water. Refrigerate this for about 15 minutes until it thickens and firms up slightly.

Step 3: Assemble the pie. Arrange the frozen raspberries and mandarin orange segments evenly on top of the cheesecake pie. Pour the gelatin mixture on top of the fruit until covered evenly. I had some extra gelatin left over so you'll need to make sure you add the gelatin very slowly or you'll end up spilling the surplus over the edge of the pie.

Let that sit for a few minutes, and then carefully transfer the pie back to the fridge. You'll need to let this set for at least another hour until the gelatin layer is firm to the touch.
