Strawberries 'n Cream Minis for the Holidays

In my annual search for yummy new holiday goodies, I decided to try using classic ingredients in a new way. Luckily, my pantry yielded the perfect solution - a quick, no-bake treat, using JELL-O Strawberry Flavor Gelatin, white chocolate, and evaporated milk. The hardest part of making them was waiting 20 minutes for them to set up in the fridge!

These JELL-O Strawberry 'n Cream Minis have a consistency like custard and the smell is amazing. They're an unexpected alternative to cookies and cakes; the colors stand out and give holiday sweets a fresh feel. My kids couldn't wait to get their hands on them!

JELL-O Strawberry 'n Cream Minis

Prep time: 15 minutes plus refrigerating time
Makes: 14 servings

Ingredients:
1/3 cup boiling water
1 pkg. (3 oz.) JELL-O Strawberry Flavor Gelatin
1 can (5 oz.) evaporated milk
2 squares BAKER'S White Chocolate
4 fresh strawberries, quartered

Add boiling water to the gelatin mix in a medium bowl. Stir it for around 2 minutes or until it's completely dissolved. In a separate microwavable bowl, combine the evaporated milk and the white chocolate. Check after a minute and give it a stir; when it's completely melted, add it to the gelatin. Beat it in a mixer until it's well blended. When it's combined and smooth, spoon the mixture into the individual cells of an ice tray (don't use the ice cube trays intended for thin ice cubes; larger square cubes work best, and your minis will look much nicer on a plate). Tip: be sure to use cooking spray so the cool treats slide out easily.

Refrigerate for 20 minutes or until they're firm to the touch. To release them from the mold, invert the tray over a non-stick kitchen cutting board or wax paper and let gravity and the cooking spray do the work for you.

Garnish them with sliced strawberries (I added mint for some extra color). Leave a few whole strawberries on the plate, and thinly slice a few to place over the top of your minis. Fresh mint sprigs add a festive green touch to an already pretty treat.
